Japchae, which translates to “mixed vegetables,” is a classic Korean dish made with sweet potato starch glass noodles (“dangmyeon”) stir-fried with a medley of colorful vegetables, thinly sliced meat, and a savory-sweet soy sauce-based dressing. The dish is known for its chewy, slightly sweet noodles and its harmonious balance of flavors and textures.

Traditionally, Japchae was reserved for special occasions, but it’s now a staple in Korean households and restaurants alike.

  • 1 small onion, thinly sliced

  • 1 red bell pepper, julienned

  • 2 cups spinach, blanched

  • 5-6 shiitake mushrooms, sliced (use fresh or rehydrated dried mushrooms)

For the Sauce:

  • 3 tbsp soy sauce

  • 2 tbsp sugar

  • 2 tbsp sesame oil

  • 2-3 garlic cloves, minced

  • Salt and pepper to taste

For Garnish:

  • 1 tbsp sesame seeds

Step-by-Step Instructions

1. Cook the Noodles

  • Bring a large pot of water to a boil. Add the sweet potato noodles and cook according to the package instructions (typically 6-8 minutes).

  • Drain the noodles and rinse with cold water to stop the cooking. Toss them with 1 teaspoon of sesame oil to prevent sticking.

2. Prepare the Protein

  • Heat a tablespoon of vegetable oil in a pan. Stir-fry the sliced meat (or tofu) with a pinch of salt and pepper until fully cooked. Remove and set aside.

3. Cook the Vegetables

  • In the same pan, stir-fry the onions, carrots, and bell peppers for 2-3 minutes until slightly tender.
